Start with a dependable baseline

Use freshly roasted coffee, filtered water and a scale. Record the dose, total beverage weight and time. Those three numbers turn a vague result into something you can adjust.

Taste first. The numbers should explain the cup, not overrule it.

Change only what needs changing

If the cup tastes sharp and thin, grind finer. If it is dry and bitter, grind coarser. Make small adjustments and keep everything else steady until sweetness and balance arrive together.
